You've asked, we listened! Our in-house nutritionist prepared a brand new recipe featuring our award winning flavour - YOGOODY SHAKE Mango. Suitable for the cold season - give it a try!
Ingredients:
½ cup (120 ml) water + 1 sachet YOGOODY SHAKE Mango
2 eggs
2 medium ripe bananas, mashed
200 g flour – can be whole wheat, or oat flour
¼ cup (30 g) shredded coconut
½ teaspoon orange zest (the zest from about ½ medium orange)
1 tsp baking powder
Instructions:
- Preheat the oven to 180°C (350°F) and line a muffin tray with paper cups.
- In a large bowl, whisk together prepared YOGOODY SHAKE and eggs, then add the mashed bananas.
- In a separate bowl, mix the flour, coconut, and baking powder. Slowly fold the dry ingredients into the wet mixture until well combined.
- Spoon the batter into the muffin cups, filling each about two-thirds full. Sprinkle with more coconut.
- Bake for 20-25 minutes or until a toothpick inserted into the centre comes out clean. Let the muffins cool slightly before serving or packing into lunchboxes.
