Tropical Banana Muffins

You've asked, we listened! Our in-house nutritionist prepared a brand new recipe featuring our award winning flavour - YOGOODY SHAKE Mango. Suitable for the cold season - give it a try!

Ingredients:

½ cup (120 ml) water + 1 sachet YOGOODY SHAKE Mango

2 eggs

2 medium ripe bananas, mashed

200 g flour – can be whole wheat, or oat flour

¼ cup (30 g) shredded coconut

½ teaspoon orange zest (the zest from about ½ medium orange)

1 tsp baking powder

Instructions:

  1. Preheat the oven to 180°C (350°F) and line a muffin tray with paper cups.
  2. In a large bowl, whisk together prepared YOGOODY SHAKE and eggs, then add the mashed bananas.
  3. In a separate bowl, mix the flour, coconut, and baking powder. Slowly fold the dry ingredients into the wet mixture until well combined.
  4. Spoon the batter into the muffin cups, filling each about two-thirds full. Sprinkle with more coconut.
  5. Bake for 20-25 minutes or until a toothpick inserted into the centre comes out clean. Let the muffins cool slightly before serving or packing into lunchboxes.
