A recipe created by our team during our end of year dinner, in collaboration with Chef Afonso Pacheco. A tropical and sweet dish to bring a fresh start to the year.
Ingredients:
- 1.2L water (for cooking the rice)
- 600g glutinous rice
- 300ml coconut milk
- 3 sachets YOGOODY SHAKE Mango
- 600ml water (to prepare the YOGOODY SHAKE)
- 150g white sugar
- 1.5 tsp salt
- Sesame oil
- Seeds or nuts
Instructions:
- Rinse the rice thoroughly.
- Combine rice and 1.2L of water in a pot. Bring to a boil, cover, reduce to low heat, and simmer for 15-20 minutes. Let it rest for 10 minutes.
- While the rice cooks, heat the coconut milk with sugar and salt in a separate pot, stirring to dissolve completely.
- Mix the cooked rice with sesame oil, then let it cool to room temperature.
- Once the coconut mixture cools, prepare the YOGOODY SHAKE MANGO with 600ml of water, and stir it into the coconut mixture. Pour this over the rice and combine.
- Serve the rice on a plate and garnish with seeds or nuts for a crunchy finish.
