Coconut Sticky Rice

A recipe created by our team during our end of year dinner, in collaboration with Chef Afonso Pacheco. A tropical and sweet dish to bring a fresh start to the year.


Ingredients:

  • 1.2L water (for cooking the rice)
  • 600g glutinous rice
  • 300ml coconut milk
  • 3 sachets YOGOODY SHAKE Mango
  • 600ml water (to prepare the YOGOODY SHAKE)
  • 150g white sugar
  • 1.5 tsp salt
  • Sesame oil
  • Seeds or nuts

Instructions:

  1. Rinse the rice thoroughly.
  2. Combine rice and 1.2L of water in a pot. Bring to a boil, cover, reduce to low heat, and simmer for 15-20 minutes. Let it rest for 10 minutes.
  3. While the rice cooks, heat the coconut milk with sugar and salt in a separate pot, stirring to dissolve completely.
  4. Mix the cooked rice with sesame oil, then let it cool to room temperature.
  5. Once the coconut mixture cools, prepare the YOGOODY SHAKE MANGO with 600ml of water, and stir it into the coconut mixture. Pour this over the rice and combine.
  6. Serve the rice on a plate and garnish with seeds or nuts for a crunchy finish.
