Wild Berries Mousse

Fancy a refreshing berry mousse that is rich in vitamin C, folate, and phosphorus? Our nutritionist, Marcia, shared a very quick and easy recipe that takes only 6 ingredients!

Serves: 4 portions

Preparation + Cooking time: 20 min + 3-4h for cooling

 

Ingredients:

1.5 cups (200 g) frozen berries

2 tbsp (40 g) honey or another sweetener

1 tablespoon warm water

2 teaspoon (4 g) gelatine powder (~4 sheets)

1 sachet (30 g) 1.2.3YOG Wild Berries

250 g low fat Greek yogurt, quark or skyr

 

Instructions:

  1. Place the berries and sweetener into a small pan, and heat for 5 to 7 minutes, stirring occasionally, until the berries start to break down. Set aside to cool.
  2. Separately, add the water and gelatine to a small bowl and rest for a couple of minutes.
  3. Add the gelatine mixture and Yogoody powder to the berries and blend until smooth, with a blender or an immersion blender.
  4. Add the Greek yogurt to the berry mixture and whisk until everything is incorporated.
  5. Pour the mixture into 4 glasses and allow to set in the fridge for 3-4 hours or overnight.

Nutritional Value (per portion): 110 kcal; 0,6 g of fat; 16,5 g of carbohydrates (15,5 g of sugars); 2,9 g of fibre; 8,6 g of protein. Rich in vitamin C, folate, and phosphorus.
